Micro Breakfast Tacos

 

Serves 3 (depending on how hungry you are...)

Prep time: 15 minutes

 

Ingredients:

  • 3 corn tortillas

  • 2 eggs
  • 1 tsp olive oil
  • Pinch of salt and pepper
  • 1/2 avocado, sliced
  • Salsa, for topping
  • Hot sauce, for topping
  • MicroGiants Variety Pack Microgreens, for topping

 

 

Directions:

  1. Char tortillas for 30 seconds a side over an open flame. Set aside.
  2. Whisk eggs in a mixing bowl. Add olive oil and eggs to a skillet on low heat. Scramble eggs and divide among tortillas. Season with a pinch of salt and pepper.
  3. Top tacos with sliced avocado, salsa, hot sauce, and plenty of microgreens.
