Micro Breakfast Tacos
Serves 3 (depending on how hungry you are...)
Prep time: 15 minutes
3 corn tortillas
- 2 eggs
- 1 tsp olive oil
- Pinch of salt and pepper
- 1/2 avocado, sliced
- Salsa, for topping
- Hot sauce, for topping
- MicroGiants Variety Pack Microgreens, for topping
- Char tortillas for 30 seconds a side over an open flame. Set aside.
- Whisk eggs in a mixing bowl. Add olive oil and eggs to a skillet on low heat. Scramble eggs and divide among tortillas. Season with a pinch of salt and pepper.
- Top tacos with sliced avocado, salsa, hot sauce, and plenty of microgreens.
